Caught a perfect day to smoke some Pastrami.

Sun came out for a nice early fall day. Got to hang out with two dogs and smoke some nice meat for the family.

Cured this one a little too long and it was a little too lean for a brisket so it didn’t turn out as tender as I’d liked it to be. Still delicious though.
